Ingredients:  2 1/4 cups spelt flour (or whole wheat flour)  1/2 cup unsweetened dutch process cocoa  1 tsp baking soda  1/2 tsp salt  1 1/4 cups granulated sugar  1 cups earth balance butter  2 tsp pure vanilla extract  1 Tbsp unsulfured molasses  1/4 cup non-dairy milk  1 cup vegan chocolate chips  Directions:  1. Pre-heat the oven to 350°F.  2. Sift together flour, cocoa, salt, baking soda and set aside.  3. In a separate bowl cream together earth balance, sugar, vanilla, and molasses until fluffy. Ingredients:  4 cups vegetable broth  1 1/2 cups raw whole grain quinoa  1 cucumber, sliced  1 red or yellow bell pepper, diced  1/2 cup lightly steamed broccoli florets  2 tomatoes, chopped  1/4 cup olive oil  1/3 cup lemon juice  dash salt and pepper, to taste (sea salt tastes best) Preparation: Cook quinoa in vegetable broth until it fluffs up, about 15 minutes, stirring occasionally. While quinoa is cooking, whisk together lemon juice, olive oil and salt and pepper. When quinoa is finished cooking, allow to cool slightly then, toss with vegetables and lemon juice mix, stirring to combine well. Add more salt and pepper to taste, and chill before serving.
